Eggs in Purgatory

This is one of those wonderfully satisfying meals you can have for breakfast, lunch, or dinner. You can make it for one or feed a crowd with it. Super simple in technique, full of flavor. This is perfect for a midnight snack after a night out too. Throw it together in minutes and enjoy!

Ingredients:

  • 6 slices bacon, cut into pieces
  • 2 cloves garlic, minced
  • 1/2-1 teaspoon chili flakes
  • 14oz. can fire roasted diced tomatoes
  • 4 eggs
  • 1/4 cup grated parmesan
  • 1 tablespoon flat leaf parsley, minced
  • crusty bread for serving

Instructions:

Cook bacon over medium heat until crispy. Add garlic and chili flakes and cook for about one minute and then add tomatoes. Once bubbling, using a spoon, make 4 indentations in the sauce and add eggs. Top with grated parmesan. Cover and cook for 4 minutes. Garnish with parsley. Serve with crusty bread for dipping.
