Goat Cheese Brownies

Is there a more divine combination than that of dark chocolate, tangy creamy goat cheese, and sea salt? I think not. Perhaps if I could work some bacon into it. Hmmm….. Alas, I digress. This recipe is a wonderful way to dress up a box of brownie mix. With a few extra ingredients, you can take ordinary (delicious) brownies and elevate them to a whole new level.

Ingredients:

  • 1 box brownie mix, plus required ingredients
  • 6 oz. goat cheese, room temperature
  • 1 tablespoon powdered sugar
  • 1 tablespoon flour
  • 1 egg
  • good quality sea salt

Instructions:

Preheat oven to 350 degrees.

Make brownie batter according to box directions. Set aside.

In a bowl, mix together goat cheese, powdered sugar, flour, and the egg until combined and smooth.

Pour half of the brownie mixture into an 8×8 pan. Scoop goat cheese layer on top of brownie batter and gently distribute the goat cheese mixture over the brownie batter. Add remaining brownie batter.  I topped mine with roughly chopped dark chocolate filled with caramel because I had that laying around, but you don’t need it. Since when have brownies been about need anyway though?? Bake for 50-60 minutes, or until brownies are set. Sprinkle sea salt over the top of the brownies while they are still warm so the salt will stick. The sea salt highlights the chocolate flavor as well as the sweetness and tang of the creamy goat cheese filling. Allow to cool completely before cutting.
