I scream, you scream, we all scream for BACON!! I love bacon. My philosophy is that it makes 99% of things better. In this recipe, it takes a delicious chicken salad sandwich and makes it…well….better! Step up your sandwich game with this BLT chicken salad. Excellent for game day finger sandwiches or a holiday snack or piled on top of a salad. BLT chicken salad sandwich. It can’t be bad.
- 2 bone-in, skin-on chicken breasts
- salt and pepper
- olive oil
- 6 slices bacon, cut into pieces
- 1/2 cup mayonnaise
- 2 tablespoons grain mustard
- juice of 1/2 lemon
- 1 teaspoon garlic powder
- salt and pepper to taste
- 1 tomato sliced
- bread or rolls
Preheat the oven to 350 degrees. Meanwhile, pat chicken dry and season liberally with salt and ground pepper. Drizzle with olive oil and place in baking dish. Bake for 35 minutes, or until cooked through. Set aside to cool. Meanwhile, cut bacon into pieces with kitchen scissors into a pan over medium low heat. Cook bacon until crisp. Drain on paper towel. Remove skin from chicken and cut chicken into bite-sized cubes and place into a bowl. Add mayonnaise, mustard, scallions, garlic powder, lemon juice, and salt and pepper and mix together until combined. Gently fold in bacon, being careful not to break up the pieces too much. Spoon onto bread and top with lettuce and sliced tomato.
Note: if you’re in a hurry, use a rotisserie chicken from the grocery store
