Yes, it’s true. I have found a way to improve upon the already delicious jalapeno popper! The addition of pulled pork adds a wonderfully smoky flavor and transforms the popper from a mere snack to a meal. In this recipe, the poppers are baked and not fried, and as far as I am concerned, this renders them healthy. This recipe is a great way to use up leftover pulled pork, ribs, or even taco meat. Be creative!!
Ingredients:

- 2 oz. cream cheese, room temperature
- 1/4 cup grated cheddar
- 1/4 cup grated monterey jack
- 6 fresh jalapenos
- 1/3 cup panko breadcrumbs
- cooking spray
Instructions:
Preheat oven to 400 degrees.
In a medium bowl, combine the pulled pork, softened cream cheese, cheddar, and monterey jack cheese. Halve the jalapenos, lengthwise and remove seeds and ribs. With a small spoon, scoop the filling into each half of the pepper. Dip the poppers into the breadcrumbs and press down to ensure the crumbs stick to the cheese. Arrange on a sheet pan and spray tops with cooking spray. Bake for 15-20 minutes, or until slightly browned.
