Nothing brightens up a cool fall day like a steaming bowl of cheese soup…with beer!! This silky rich and complex soup will bring a smile to your face. And it’s super easy to make!! Wow your friends and family with this cozy and delicious soup.
Ingredients:
- 1/4 cup butter
- 1 clove garlic
- 3 tablespoons flour
- 4 cups chicken stock or vegetable stock
- 2 cups grated extra sharp cheddar cheese
- 1 cup beer (dark beer works better)
- salt and freshly ground pepper
- pretzels for serving
Instructions:
Heat the butter in a saucepan over low heat and toss in a whole clove of garlic. Simmer the garlic in the butter to infuse the butter with the garlic flavor. After about 5 minutes, remove garlic and discard. Raise the heat to medium and whisk in the flour and cook until the mixture starts to bubble, about 3 minutes. Whisk in the stock and beer and bring to a boil, then reduce the heat to a simmer. Incorporate the cheese stirring until fully melted and smooth. Season with salt and pepper, to taste (I say generously…Be brave!). Top with more shredded cheddar and serve with pretzels.
Note: This soup can also be topped with crumbled cooked bacon, scallions, minced jalapeno, and minced tomatoes. Be creative!!
