This recipe is courtesy of my best friend, Andy. He has been making these cookies for years and they are wildly popular. The combination of the chewy oatmeal cookie, the tangy cranberries, and the slightly bitter dark chocolate balance out the sweet and result in a most delicious cookie. Perfect for the holidays or to brighten any day, these delightful cookies will become a new favorite.
Ingredients:
- 3/4 cup butter
- 3/4 cup granulated sugar
- 3/4 cup brown sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1 1/4 cup flour
- 1 teaspoon baking soda
- 3/4 teaspoon cinnamon
- 1/2 teaspoon salt
- 2 3/4 cup rolled oats
- 1 1/4 cup fresh cranberries (not dried)
- 1 1/4 cup dark chocolate chunks or chips
Instructions:
Preheat oven to 375 degrees.
In a large bowl, cream together butter and both sugars until smooth. Beat in eggs and vanilla until fluffy.
In a separate bowl, sift together flour, baking soda, cinnamon, and salt. Gradually beat into butter mixture.
Stir in oats and cranberries, and chocolate chips and drop tablespoonfuls onto ungreased cookie sheet.
Bake 14 minutes or until golden brown. Cool slightly on pan and then gently remove cookies and cool completely on wire rack. Store in airtight container.
Recipe makes 40 cookies.
